Salty Butterscotchy Chocolaty Yummy Cookies

Hi friends, Jen here for this months Late Night Snack!!  This month I’m gonna share with you recipe that is from scratch but still pretty easy and believe me WORTH the hassle. Especially if you’re a salty/sweet combo loving fool like me!  Let me introduce to you my Salty Butterscotchy Chocolaty Yummy Cookies!

I created this recipe to use up the partial bag of chocolate and butterscotch chips I has leftover and then decided to throw in some kosher salt because I’m obsessed with salty sweet combinations.

A salty sweet treat!
Ingredients
  • 2¼ cup flour
  • 1 tsp baking soda
  • 2 tsp kosher salt
  • ½ cup of butter
  • ½ cup Nutella
  • ½ cup brown sugar
  • ½ cup sugar
  • 1 tsp vanilla extract
  • 2 large eggs
  • ¾ cup chocolate chips
  • ¾ cup butterscotch chips
Instructions
  1. Preheat oven to 350 degrees.
  2. Combine flour, baking soda, and salt in a small bowl.
  3. Mix sugar, butter, Nutella, vanilla extract and eggs. Stir until smooth.
  4. Stir in flour mixture a little at a time until fully combined.
  5. Stir in chocolate and butterscotch chips.
  6. Spoon rounded balls of cookie dough onto an ungreased cookie sheet.
  7. Bake for 10 minutes.
  8. Cool and enjoy.

{Late Night Snack} Easy Cake Pops

Hi friends, Jen here to share with you this February’s (by the skin of my teeth) Late Night Snack! I thought I’d change things up from the usual cupcakes I make and share with you how to make cake pops with a box of cake, can of frosting, and melted chocolate!

I recently made a batch of these as bridal shower favors and everyone raved about them! Although they are easy, they are also a bit of a process so I would start a few days before you plan on serving. In my case I baked the cake Wednesday evening, crumbled and formed into cake balls on Thursday evening and dipped in chocolate and packaged up on Friday evening. That was the perfect amount of time for me to be able to give them away on Saturday morning. I promise you these little babies are worth the hassle and if you had to you could totally make them in the same day if you needed just be sure to start them early to allow cooling time in between steps.

Cake pops that everyone will love!
Ingredients
  • 1 box of cake mix, flavor of choice (oil, egg, water as the mix calls for)
  • 1 can of frosting flavor of choice
  • 2 bags of chocolate chips or 3 bags of candy melts
  • candy sticks (I used paper straws)
  • sprinkles (optional)
Instructions
  1. Bake cake per package directions and let cool.
  2. Once cooled, take a fork to it and crumble it up.
  3. Microwave can of frosting in 30 second increments until it’s liquid.
  4. pour into crumble cake and combine well.
  5. Roll mixture into cake ball size and shape, place onto a pan covered in wax paper.
  6. Dip cake pop stick into melted chocolate and push into the formed cake ball.
  7. Refrigerate formed cake balls until firm. (I refrigerated overnight)
  8. Melt chocolate chips or candy melts in 30 second increments until melted.
  9. Dip cake balls into chocolate and place back onto the wax paper until firm.
  10. Once the chocolate firms up, wrap up to gift or sit back and enjoy!

Is it just me or are the men in our lives hard to buy for? I have the hardest time figuring out what to do/make for my husband…especially for Valentines Day! So I decided to dedicate this cupcake post to the men in our lives! I think it’s a scientific fact that all men love bacon! At least every man I know does. So I thought with all the bacon infused treats out there lately that I would give in to the fad and give it a try as well!

A delectable combination of dark chocolate and bacon make these cupcakes to die for!
Ingredients
  • 1 box dark chocolate cake mix
  • Ingredients according to package directions
  • 4-6 thick slices of bacon, crumbled
  • Vanilla frosting
  • Pecans, chopped (optional)
Instructions
  1. Mix cake mix according to package directions (or with beer instead of water)
  2. Add ¾ of the crumbled bacon
  3. Cook according to package
  4. Once cooled, add frosting and sprinkle the remaining bacon and chopped pecans

Another fun twist that we enjoyed was using stout beer in place of the water. The alcohol cooks out and I felt like it made the cake such a nice texture. Well I hope you give this tasty recipe a try! The man in your life will surely appreciate you making him this salty/sweet treat!

When I think of Fall I think of boots, scarves, and hot cocoa! I think of fallen leaves and turkeys in the oven, baked goods and mashed potatoes! I thought I’d combine a couple of my fall favorites and add hot cocoa mix to a basic white cake mix with a couple of drops of mint extract for some delicious cupcakes! Let me introduce to you our Minty Hot Cocoa Cupcakes.

Minty Hot Cocoa Cupcakes
Ingredients
  • White cake mix (egg whites, oil, and water per the box directions)
  • 2 packets instant hot cocoa mix
  • 3 drops of mint extract
  • Chocolate frosting
  • Andes mints baking chips
Instructions
  1. Pour powder cake mix into a bowl, remove 2 tablespoons and replace with 2 envelopes of intant hot cocoa mix.
  2. Make cake mix per directions and add a few drops of mint extract.
  3. Bake Cupcakes and let cool.
  4. Once cooled, frost with chocolate frosting, sprinkle with Andes mint baking chips on top.
  5. Enjoy!

{Late Night Snack} Halloween Candy Cupcakes

Hello and welcome to the third installment of Late Night Snack! If you missed my first two Late Night Snack posts, for Pink Lemonade Cupcakes and Mocha Cappuccino Hazelnut Cupcakes, then go check them out NOW!

Well, it’s October, which means it’s time for all those great fall things…long sleeves and boots, changing of the leafs and cool weather. Who am I kidding, we live in the desert but it is Halloween time which means trick or treating and LOTS of candy! So let’s put that candy to good use. Oh, and a huge thanks to our fellow Night Owl Jessica of Flecky Photography for taking the pictures.

Chocolate and candy cupcakes with peanut butter and vanilla frosting.
Ingredients
  • 1 box chocolate cake mix (oil, egg, water as the mix calls for)
  • 2 king sized candy bars of choice (or lots of small fun sized ones from trick or treating)
  • 1 container of vanilla frosting
  • ⅓ cup of peanut butter
Instructions
  1. Chop candy into small pieces, set aside ⅓ to sprinkle on top.
  2. Make chocolate cake according to package directions.
  3. Stir in chopped candy.
  4. Pour into cupcake liners and bake according to package directions.
  5. While cupcakes are baking, mix peanut butter into the vanilla frosting.
  6. Once cupcakes are cooled, frost with peanut butter/vanilla frosting and sprinkle with candy.

{Late Night Snack} Mocha Cappuccino Hazelnut Cupcakes

Hello and welcome to the second installment of Late Night Snack! If you missed my Pink Lemonade Cupcakes last month, go check them out! If you know the Night Owls, you know that we love our coffee! And being that coffee is so near and dear to us, I decided to use our vice of choice to make this month’s sweet treat: Mocha Cappuccino Hazelnut Cupcakes! I know, it’s a mouthful, but trust me they’re worth saying AND making! A huge thanks to our fellow Night Owl Jessica of Flecky Photography for taking the pictures. And here’s all you need to make your very own. Enjoy!

Mocha Cappuccino Hazelnut Cupcakes

Chocolate cupcakes made with mocha cappuccino hazelnut spread, topped with mocha frosting.
Ingredients
  • 1 box chocolate cake mix
  • 2 eggs
  • 1 cup water
  • 1 can vanilla frosting
  • ½ cup Jif Mocha Cappuccino Hazelnut spread
  • 1 packet instant coffee
Instructions
  1. Make the cake mix according to the directions on the box, except for the oil (mine called for eggs and water) then add the ½ cup of the Jif.
  2. Put the cupcakes in the oven per the package directions and remove to cool.
  3. While the cupcakes are baking, it’s time to flavor the frosting! Add the instant coffee to the vanilla frosting and mix thoroughly.
  4. Frost cooled cupcakes with the mocha frosting.

{Late Night Snack} Pink Lemonade Cupcakes

Pink Lemonade Cupcakes

We’re introducing a new series here for all you Night Owls called “Late Night Snack“! Our contributor Jen will be posting a monthly yummy recipe for those late night cravings, and here is the first installment: Pink Lemonade Cupcakes!

Living in sunny AZ means dealing with the heat…A LOT!!  There are few things more refreshing than an ice cold glass of Pink Lemonade on a hot summer day! Knowing that for a lot of people August marks the end of summer (although it’ll still be warm here until October) I thought it’d be nice to give the summer a proper goodbye with some delicious [and simple] pink lemonade cupcakes!

I’m a busy momma so I don’t usually make a lot of things from scratch especially cake and frosting..I’m more about tweaking things to make them fun and unique.. A reci-tweak :)

{Late Night Snack} Pink Lemonade Cupcakes

Delicious and refreshing pink lemonade cupcakes.
Ingredients
  • 1- box white cake mix
  • 3-egg whites
  • 1 cup water
  • ¼ cup vegetable oil
  • 1 can vanilla frosting
  • 1 packet pink lemonade KoolAid
  • Red food coloring (opt)
  • [Yep, KoolAid! This powder is so concentrated it doesn't take much to get that delicious tart lemonade flavor! Imagine all the possibilities with the other flavors.]
Instructions
  1. Make the cake mix according to the directions on the box (mine called for egg whites, water, and vegetable oil) then add all but ¾ teaspoon of the KoolAid powder. Be sure to use a hand mixer to get the batter super smooth!
  2. If you want your cake to appear more pink, you’ll also need to drop in a dot of food coloring, it doesn’t take much to get a great pink color!
  3. Put the cupcakes in the oven per the package directions and remove and cool.
  4. While the cupcakes are baking, start stirring up your frosting. Add the ¾ teaspoon of KoolAid and mix into the frosting (you can put in less or more depending on how tart you’d like it)
  5. And that’s it! You’ve turned a simple white box cake and canned vanilla frosting into a delicious and refreshing treat!
