Hi friends! Father’s Day is right around the corner so it’s time to start planning the menu, right? Well today I’m sharing with you a delicious *Father-Approved* Father’s Day Italian feast with gourmet food items we picked up from Cost Plus World Market! Last weekend I took my husband shopping at World Market for Father’s Day and to get an idea of what kind of meal he would want for his special day. What cracks me up is that he whined at first (shopping?!), but as soon as he saw all the awesome products World Market has to offer, he was singing a different tune.

We headed into the gourmet food section of World Market – have you been? There is just so much to offer! After my husband had grabbed every bowl of Vietnamese Pho that the store had, we finally got to talking dinner. After looking at everything, here are the items we picked up…

And what did I make with those products? Well from the photo above you may have guessed: Meatloaf Meatballs and Pasta and a Meatball and Red Pepper Bruschetta appetizer. And let me tell you…yuuuummy! It was so tasty. My husband is a huge fan of meatloaf but honestly I have always been scared to give it a try. But just by adding the meatloaf seasoning to a pound of beef was instant goodness. So, are you ready for the recipe? Here ya go!

A delicious meatball and pasta recipe – with a twist!
Ingredients
  • 1 lb ground beef
  • 1 package Maggi Meatloaf Seasoning
  • 1 jar World Market Tomato Basil Sauce
  • ½ package Grand Mere Egg Nest Pasta
  • Water
  • Vegetable oil
Instructions
  1. Pre-heat oven to 350 degrees.
  2. Mix together meatloaf seasoning, ½ cup water and ground beef.
  3. Form meatball rounds from ground beef mixture and set aside.
  4. Heat vegetable oil in a pan and place meatballs in the pan, turning occasionally to simply sear the meat around the outside.
  5. Place seared meatballs on a tray and bake in the oven for 30 minutes.
  6. While meatballs are cooking, cook pasta according to the instructions on the package.
  7. Heat up tomato basil pasta sauce as well.
  8. Once meatballs are cooked, plate pasta, meatballs and cover with pasta sauce.

An easy and delicious twist on a traditional bruschetta appetizer.
Ingredients
  • Sliced baguette bread
  • Meatballs
  • World Market Cucina & Amore Piquillo Pepper Bruschetta sauce
  • Garlic clove, cut and peeled
  • Extra Virgin Olive Oil
Instructions
  1. Bruch baguette slices with EVOO on both sides.
  2. Place in a hot pan or broil until both sides are toasted.
  3. Rub one side of the baguette slice with a garlic clove.
  4. Top with red pepper bruschetta sauce and half a meatball (or whole if you made them smaller – see meatball recipe above).

Delicioso! And for someone who was scared of meatloaf before, I think the meatballs turned out quite tasty! I definitely preferred the taste of the meatloaf meatballs over just plain ground beef.

And I made my husband happy – what is better than that? I know I’ve done a good job when he’s telling me how good it is as we’re eating, you know, rather than when I have to ask 100 times during the meal, “is it ok?” Haha. So be certain that this was one of those “winning” moments in the kitchen.

Chunky Chicken Salad Cups

I don’t know about you, but I love me some appetizers! In cute cups. Wonton cups. Filled with Chunky Chicken Salad.

Okay, so, I didn’t always put my famous chicken salad in wonton cups, but now I have and I love it even more. Yes, it’s famous. It doesn’t matter if it’s only famous in my corner of the world – to me it is famous. These cups might make it famouser. I know what you’re saying, I can hear you – That’s not a worrrrrrd! … Oh… well… now it is! :P

Soooo, what do you do with leftover chicken?

I throw it on top of a pizza, sometimes I add it to a taco shell, or I mix it in this salad together with marinated mushrooms, pickles, and sour cream. YEP! Don’t knock it ’til you try it! You will be eating up your fingers – it’s that good!

In fact, when I go to a BBQ, this is the salad that I am asked to bring 90% of the time. The other 10% is reserved for dessert. But, I bring dessert wherever I go – can’t have me a partaaaaay without somethin’ sweet, ya know.

And since the weather decided to go from 45 to 90 in less than 42.5 hours, I think you need to go to a BBQ and bring this salad with you.

Chunky Chicken Salad Cups

Imma tell you one thing – you can put as much or as little as you want into that salad. I never measure. As I said, I just throw in the ingredients, mix in the sour cream, and fill up the wonton cups.

A refreshing chicken salad mixed with pickles, mushrooms and sour cream.
Ingredients
  • For the Wonton Cups
  • 12 Wonton Cups
  • baking spray
  • For the Chicken Salad
  • 2 cups shredded, cooked chicken breast, cooled
  • 1 cup chopped marinated mushrooms (canned mushrooms work just as well)
  • 1 cup chopped baby dill pickles
  • 1 tub (8 oz.) sour cream (I prefer to use Daisy Sour Cream for this recipe)
Instructions
  1. Preheat oven to 350.
  2. Lightly grease a 12-cup cupcake tin with baking spray.
  3. Place wonton wrappers in the bottom of the pan.
  4. Bake for 5 to 7 minutes, or until crisp and slightly brown.
  5. Prepare the chicken salad by combining all ingredients in a medium-size mixing bowl; mix well.
  6. Fill baked wonton cups with chicken salad.
  7. Serve.

Hi friends! I hope you had a fabulous weekend and if you’re a mom, that you had a great Mother’s Day! Today I’m sharing a delicious strawberry cake that, yes – starts with a box cake – but you’d never know by the taste! Now, the story behind this cake. Strawberry cake is my husband’s favorite cake. And I’m sure I’m not the only one in history who’s tried a shortcut here and there – right? So when I was shopping for Easter lunch and saw a strawberry boxed cake and strawberry frosting in the store I thought I had hit the jackpot! But then I made the cake. And whoa. It was not at all what I had in mind! It tasted like some kind of strawberry candy – and when most of the cake went uneaten, I knew I wasn’t the only one who wasn’t impressed. So I set out for a delicious compromise.

So like many of our cupcake recipes here on A Night Owl, our Tastes Like Homemade Strawberry Cake starts with a box cake mix!

A delicious strawberry cake starting with a box cake mix, but tastes like homemade!
Ingredients
  • 1 plain white cake mix
  • 1 3oz box strawberry Jello
  • 4 tbsp flour
  • 1 cup vegetable oil
  • ½ cup granulated sugar
  • ½ cup milk
  • 4 large eggs
  • ½ cup chopped strawberries and juice (fresh or thawed frozen)
Instructions
  1. Preheat oven to 350 degrees.
  2. Mix cake mix, strawberry Jello, flour, oil, sugar, milk, eggs and strawberries and juice with an electric mixer until well blended.
  3. Pour batter into a rectangular cake pan or into three round cake pans.
  4. Bake for 33-35 minutes or until toothpick inserted into the middle of the cake comes out clean.
  5. If you’re stacking round cakes, remove from the pans and allow to cool for at least 30 minutes before frosting.
  6. Frost with Easy Strawberry Frosting and enjoy!

  • 8 tbsp (1 stick) butter at room temperature
  • 4 cups sifted confectioners sugar
  • ½ cup chopped strawberries
Instructions
  1. With an electric mixer, blend softened butter.
  2. Add sifted confectioners sugar and strawberries (with minimal juice) and mix on low until blended.
  3. Continue to blend on low until the frosting is creamy.
  4. If the frosting is too thin, add more sugar; if it is too thick, add more strawberries.

Well there you have it! The cake is fairly easy and tastes oh so delicious! And if making your own frosting is too much, you could even use a can of frosting from the store and I’m sure it would taste great as well. I think a yummy cream cheese frosting would be fantastic too – I just try to limit the amount of dairy in desserts I make for my boys.

Hi friends! Today I’m sharing with you a quick, easy and delicious Buffalo Chicken Wrap recipes made with Tyson Chicken Fries! We’re big fans of Tyson chicken in our house – previously we’ve shared a delicious Barbecue Chicken Pizza with Tyson Honey BBQ Strips and our boys just love Tyson Chicken Nuggets! So when I had the opportunity to try out Tyson Chicken Fries and come up with a yummy recipe – I jumped at the chance!

So this past weekend I headed down to our local Sam’s Club to pick up some groceries and our Tyson Chicken Fries. You can check out my entire shopping trip in this Google+ Album! I was excited to get the chicken fries home to give them a try and to use them in a recipe. Since I love all things buffalo sauce, I decided on coating the fries with a little buffalo sauce and to incorporate the buffalo chicken fries into a delicious wrap!

  • Tyson Chicken Fries
  • Buffalo sauce
  • Wraps or tortillas
  • Salad mix or chopped lettuce
  • Ranch or bleu cheese dressing
Instructions
  1. Cook Tyson Chicken Fries according to directions on the bag.
  2. Coat cooked fries with buffalo sauce.
  3. Place coated fries in the broiler for 5 minutes.
  4. During that time, toss salad or chopped lettuce in ranch dressing.
  5. Once buffalo chicken fries are done, lay out wrap or tortilla, top with salad mixture and buffalo chicken fries and roll it up!

So simple – but let me tell you, they are delicious! I was actually quite surprised at how much I liked them and finished off the wrap in no time. So! Did you like that Strawberries and Cream Ice Cream Cake? It’s crazy-good, right?! I love that stuff!

Wanna know what else I love? PIZZA! Can you relate?

BUT, I only like homemade pizza. For reals. I’m not one to call up a pizza place and order delivery. I did that a lot back in college and have not done it ever since. I make my own. Including the crust!

Spinach and Artichoke Dip Pizza | #recipe #pizza

Lemme tell you about this crust. It’s sooooo easy, you’ll probably want to jump on it as soon as you read the recipe. It will only take 5 minutes of your time to prepare.

And then there’s the toppings!! Oh, the toppings… so, so good. Sautee some spinach here, open up a can of artichokes there, mince some garlic, spread some cream cheese, and…and that’s it! Pop it in the oven for about 15 minutes and have yourselves a partaaaaay!

Now go and make it! Make sure to let me know how you have fallen in love with the best pizza you have ever made. Everrrrr! :-D

Homemade pizza crust topped with spinach, cream cheese, and artichokes.
Ingredients
  • For the Crust
  • 1 cup warm water (110 degrees Fahrenheit)
  • 1 package (1/4 oz.) instant yeast
  • 2 tablespoons olive oil
  • 2-1/2 cups all-purpose flour
  • Garlic powder
  • For the Toppings
  • 4-ounces Whipped Cream Cheese
  • 1 can (14 oz.) quartered artichokes
  • 1 teaspoon olive oil
  • 1 bag (9 oz.) spinach
  • Salt and freshly ground pepper, to taste
  • 2 cloves garlic, minced
  • ½ cup shredded parmesan cheese
  • 2 cups Shredded Mozzarella cheese
Instructions
  1. Preheat oven to 375.
  2. Pour the warm water in a large bowl; whisk in the yeast until completely dissolved.
  3. Add in the olive oil and flour.
  4. Stir with a wooden spoon until it all comes together and a ball of dough is formed. You may need to use your hands.
  5. Cover with a kitchen towel and set in a warm place for 15 minutes.
  6. Line a baking sheet or a pizza pan with aluminum foil and spray it with non-stick spray.
  7. Transfer the dough to a lightly floured surface and knead for 3 minutes.
  8. Spread the pizza dough on the prepared pan, using the palm of your hands and fingers to stretch it out to about a 1-inch thickness. (You can make it as thin or as thick as you want)
  9. Bake it in the oven for 10 minutes.
  10. Remove from oven and let cool for 5 minutes.
  11. Spread the cream cheese on top of the pizza crust.
  12. Separate the artichoke leaves and spread over the cream cheese; set aside.
  13. Heat the olive oil in a frying pan and add the spinach.
  14. Season with salt and pepper, and cook until just wilted.
  15. Mix in the minced garlic and remove from stove.
  16. Spread the spinach mixture on top of the artichokes.
  17. Top with cheeses.
  18. Bake for 15 to 20 minutes, or until crust is browned and cheese is melted.
  19. Serve.

Ingredients
  • 1 bottle World Market Blood Orange Italian Soda
  • 1 bottle white wine
  • 1.5 cups orange juice
  • 2 cups berries or fruit of choice
  • ice as needed
Instructions
  1. Simply combine the World Market Blood Orange Italian Soda, white wine and orange juice together in large pitcher and stir.
  2. Add in berries or fruit of choice and ice as needed.

 
Doesn’t that sound amazing? Well, it is! It’s light and the soda adds in just the right amount of flavor and fizz. I might just head back down to World Market to grab a few more of these bottles to have on hand. It’s like 3, or 8 already made ingredients, and there’s no baking involved. All you have to do is assemble it! Yaha! <—- (said in my best “Ross” voice. P.S. I’m obsessed with Friends!).

  • 1 cup cold heavy whipping cream
  • 1 teaspoon pure vanilla extract
  • 1 tablespoon sugar
Instructions
  1. In your mixer’s bowl, combine cream, vanilla, and sugar.
  2. Beat the mixture on high until stiff peaks form; about 2 to 3 minutes.
  3. Put it in the fridge until ready to use.

Ingredients
  • Whipping cream
  • 1 all-butter pound cake (I use Sara Lee), cut into 8 slices
  • 2 cups strawberry ice cream
  • 10 whole strawberries, sliced
Instructions
  1. Line a 9×5 loaf pan with aluminum foil, leaving an overhang on opposite sides to lift the cake out.
  2. Place half of cake slices in a single layer in bottom of prepared pan.
  3. Using an offset spatula, spread the ice cream over cake.
  4. Layer sliced strawberries over ice cream.
  5. Spread half of the whipping cream over the strawberries.
  6. Place the rest of the cake slices over the whipping cream.
  7. Spread the rest of the whipping cream on top of the cake slices.
  8. Let cake set in the freezer for at least 6 hours or overnight.
  9. When ready, lift the cake out of the pan, cut and serve.

Hi friends! I am so excited to share a fun, new recipe with you today: Loaded Baked Potato Casserole with Kraft Fresh Take! Kraft Fresh Take is a meal kit that provides you with a fresh take on any meal. The cheese and breadcrumb mix gives you flavorful, crisp and cheesy dishes with easy preparation! So when I was tasked to come up with a tasty side with Kraft Fresh Take – I immediately thought of a yummy loaded baked potato! But baked potatoes (depending on how you cook them) can take some time to prep, and I’m usually a quick 30-minute meal kind of gal. So I came up with this idea to mix loaded baked potato ingredients with some mashed potatoes, top with Kraft Fresh Take, and make it a casserole side dish!

Once I had this idea in mind, I headed down to my local Walmart to pick up the groceries. You can see the Google+ Album of my shopping trip here! I grabbed all the things I needed, including Kraft Fresh Take. You can find Kraft Fresh Take varieties in the refrigerated cheese section of your local Walmart.

Once I had groceries in hand, I headed home to whip up the Loaded Baked Potato Casserole as a side to our rotisserie chicken for dinner! Here’s the recipe I came up with.

A delicious “loaded” mashed potato recipe made with Kraft Fresh Take cheese & breadcrumb mix.
Ingredients
  • 2 cups mashed potatoes (fresh or instant)
  • 2 cups steamed broccoli
  • 2 oz real bacon bits
  • 1 tbsp cream cheese
  • 6 oz package Kraft Fresh Take Cheddar Jack & Bacon Mix
  • Sour cream (opt)
  • Chives (opt)
Instructions
  1. Mix 1 tbsp cream cheese into mashed potatoes.
  2. Stir in steamed broccoli and bacon bits.
  3. Spread mashed potato mixture into a casserole dish.
  4. Open Kraft Fresh Take package to mix cheese and breadcrumbs.
  5. Cover mashed potatoes with Kraft Fresh Take mix.
  6. Bake for 20 minutes at 375 degrees.
  7. Remove from oven, dish out portions and serve with sour cream and chives (optional).

The end result was amazing. I’m serious. Because I don’t have a lot of time during the week outside of work and other activities, I don’t spend a lot of time in the kitchen. So when I make something that my husband really likes, he says so. Over and over. And this weekend he raved about this dish, and specifically about the Kraft Fresh Take topping. So I’ve started thinking of how I can incorporate more Kraft Fresh Take into our meals! It’s really a quick and easy (and inexpensive!) way to kick your meals up a notch.

Hi friends, Jen here for this months Late Night Snack!!  This month I’m gonna share with you recipe that is from scratch but still pretty easy and believe me WORTH the hassle. Especially if you’re a salty/sweet combo loving fool like me!  Let me introduce to you my Salty Butterscotchy Chocolaty Yummy Cookies!

I created this recipe to use up the partial bag of chocolate and butterscotch chips I has leftover and then decided to throw in some kosher salt because I’m obsessed with salty sweet combinations.

A salty sweet treat!
Ingredients
  • 2¼ cup flour
  • 1 tsp baking soda
  • 2 tsp kosher salt
  • ½ cup of butter
  • ½ cup Nutella
  • ½ cup brown sugar
  • ½ cup sugar
  • 1 tsp vanilla extract
  • 2 large eggs
  • ¾ cup chocolate chips
  • ¾ cup butterscotch chips
Instructions
  1. Preheat oven to 350 degrees.
  2. Combine flour, baking soda, and salt in a small bowl.
  3. Mix sugar, butter, Nutella, vanilla extract and eggs. Stir until smooth.
  4. Stir in flour mixture a little at a time until fully combined.
  5. Stir in chocolate and butterscotch chips.
  6. Spoon rounded balls of cookie dough onto an ungreased cookie sheet.
  7. Bake for 10 minutes.
  8. Cool and enjoy.

Love enchiladas but don’t have the time to prepare? Pull this casserole together in minutes with the same great taste!
Ingredients
  • 1 lb ground beef
  • 1 dozen corn tortillas
  • 1 can chopped olives
  • 1 10oz can cream of chicken soup
  • 1 10oz can cream of mushroom soup
  • ½ chopped onion
  • 1 lb shredded cheddar cheese
  • 1 can diced green chilies
  • 1 10oz can enchilada sauce
  • Optional garnish: sour cream, guacamole and salsa
Instructions
  1. Cook the ground beef until well done.
  2. Mix together soup, enchilada sauce, olives, onion, and chilies.
  3. Add ground beef and cheese.
  4. Cut corn tortillas into strips or sections and add in to the mix.
  5. Transfer to a casserole dish and bake for 45-60 minutes at 350.
  6. Garnish with sour cream, guacamole and/or salsa (optional).

Hi friends! Now that we’ve made it past St. Patrick’s Day, I think we can focus our full attention on Easter crafts and recipes – and we have a great one for you today – Easter Basket Cupcakes! These are again straight from Grandma’s Kitchen. My mother is probably the best baker that I know, and I love that she loves to make fun treats for our family. Last week we shared her famous Honey Caramel Corn with you, and this week we’re sharing these adorable cupcakes!

Cute and easy Easter Basket Cupcakes!
Ingredients
  • Chocolate cake mix and ingredients called for on the box
  • Cupcake liners
  • Vanilla icing
  • Shredded coconut
  • Green food coloring
  • Jelly beans
  • Chocolate Twizzlers
Instructions
  1. Simply bake the chocolate cupcakes according to the directions on the box.
  2. While baking, color shredded coconut with green food coloring.
  3. Once cupcakes are baked and cool, top with vanilla frosting, green shredded coconut and jelly beans.
  4. Insert a chocolate Twizzler like a “basket handle” into the cupcake.
  5. And you’re done!

Hi friends! Today I’m sharing with you the most delicious recipe for caramel corn, WITHOUT any corn syrup – Honey Caramel Corn! This recipe is straight from Grandma’s Kitchen, that is, from my mom! Our oldest is really sensitive to processed sugars so she came up with this awesome recipe so that he could still enjoy Grandma’s sweet snacks. How sweet is that? She made it for Little Man’s birthday party and it was a HIT! And because I know there are so many out there that might be in the same boat, we definitely wanted to share this tasty recipe!

Honey Caramel Corn

Do you love caramel corn but don’t love using corn syrup? Then this is the caramel corn for you! Made with sweet honey, it’s equally as delicious!
Ingredients
  • 10 cups popped popcorn
  • ½ cup honey (local honey is my preference)
  • 3 Tbsp. oil or butter
  • ¼ tsp. salt
  • ½ tsp. baking soda
Instructions
  1. Pour popped popcorn into a large casserole dish .
  2. Heat the honey, oil & salt in a saucepan until bubbly.
  3. Keep at a low boil, whisking occasionally, for 4-5 minutes, until the mixture begins to thicken.
  4. Add the baking soda, whisk and pour over the popcorn.
  5. Mix until popcorn is well coated. (This is very hot so use caution).
  6. Bake for 1 hour at 275 degrees, stirring every 15 minutes.
  7. Pour into a large container & allow to cool before serving.
  8. Store in an airtight container.
  9. Optional: Add nuts to the popcorn before topping with the caramel.

Hi friends! Today I’m s haring the yummiest (yes, that’s a word) recipe for Southwestern Chicken Tortilla Soup with you that I made with Classico Tomatoes! But first, let me provide you with the background story. Did you have a romantic date night for Valentines? With two little ones, we don’t get out much, so a quiet dinner at home is our typical date night these days. So that’s just what we did! And what better to round out our Winter months with a delicious homemade soup?

We ADORE soup in our home. All of my boys love it! And I find that it’s an easy meal to put together for this busy, working mama. And since my boys all have aversions to dairy, most of the soups I make are tomato-based. And there’s a new tomato in town, Classico Canned Tomatoes! Classico Tomatoes are 100% all-natural, always packed fresh with no preservatives! And that’s always important when you’re cooking for your loved ones.

So we decided to give it a try for our Date Night soup of choice: Southwestern Chicken Tortilla Soup. We used both Classico Crushed Tomatoes and Classico Heavy Tomato Puree along with just a few other ingredients to make it a meal!

An easy and delicious, hearty soup made with Classico Tomatoes!
Ingredients
  • 1 28oz can Classico Crushed Tomatoes
  • ¼ cup Classico Heavy Tomato Puree
  • 1 can whole black beans, drained
  • 1 can corn, drained
  • 1 can green chilies
  • 1 can chicken broth
  • 1 package taco seasoning
  • 1 shredded rotisserie chicken
  • Shredded cheese (opt)
  • Sour cream (opt)
  • Tostada shells or fried corn tortillas (opt)
Instructions
  1. Mix together crushed tomatoes, heavy tomato puree, black beans, corn, green chilies, chicken broth, taco seasoning and shredded chicken in a large pot.
  2. Bring to a boil then lower heat to simmer for 30 minutes.
  3. Spoon soup into bowls, garnish with cheese and sour cream (opt) and serve with ready-made tostada shells or fried corn tortillas.

Hi friends! Did you all celebrate the Big Game yesterday with family and friends? We did! We love football parties in our house. And this year we had some fabulous food and appetizers, thanks in part to Tyson Honey BBQ Chicken Strips! Now I love a good home-cooked meal just like any other gal, but if you put together parties you know that the food portion of party planning can be tricky! You want a delicate balance of homemade, tasty and easy so that you’re not stressing out over every little detail at the end.

For our party I decided on a menu of some sweet treats, snack mix, drinks and some fabulous BBQ Chicken Pizza! I knew that I could get all I needed and more from our local Walmart, so me and little man set out to shop. You can check out our fun shopping experience in our Game Day Shopping at Walmart Google+ album! While there we picked up everything we needed, including some Tyson’s Honey BBQ Strips!

Now these strips came in so handy! Rather than having to cook the chicken, I just grabbed a ready-made pizza crust, our favorite BBQ sauce and cut up the strips to put on the pizza! Genius, right?

Just top that baby with some diced green onions and fresh mozzarella and you have  yourself one FANTASTIC pizza! I have to admit, I think I loved it even more with the Tyson Honey BBQ Chicken, over the grilled chicken we normally have. The flavor was so rich and amazing! Sound good? Ingredients
  • Tyson Honey BBQ Chicken Strips
  • Ready-made (or homemade) pizza dough
  • Favorite BBQ Sauce
  • Sliced red onions
  • Fresh mozzarella
  • Fresh cilantro
Instructions
  1. Cook pizza dough according to instructions; I laid my ready-made dough onto a cookie sheet and baked for 8 minutes before preparing the rest of the pizza.
  2. Spread a layer of BBQ sauce on the pizza dough.
  3. Cut the Tyson Honey BBQ Chicken Strips into small pieces and arrange on pizza dough.
  4. Layer sliced red onions over the chicken.
  5. Cover with mozzarella and bake until the cheese begins to turn golden on peaks and edges.
  6. Sprinke fresh, chopped cilantro over the pizza, slice and serve!

Hi friends! It’s likely my favorite dessert on planet Earth – the Pizookie. If you know of it, it’s probably from the likes of BJ’s Brewery or Oregano’s. Both delicious, both high on my list. But did you know that they are also so very easy to make at home? We had a night alone this weekend while the kids were at the grandparents, so I whipped up a couple as a sweet treat for me and the hubs. Adapted from Nestle Chocolate Chip Recipe.
Ingredients
  • 2¼ cups all-purpose flour
  • 1 tsp. baking soda
  • 1 tsp. salt (I use sea salt)
  • 1 cup (2 sticks) butter or margarine, softened
  • ¾ cup granulated sugar
  • ¾ cup packed brown sugar
  • 1 tsp. vanilla extract
  • 2 large eggs
  • 1 cup chocolate chips
  • 2 cups vanilla ice cream
Instructions
  1. Preheat the oven to 375 degrees.
  2. Mix flour, baking soda, and salt in a small bowl.
  3. Cream together butter, granulated sugar, brown sugar and vanilla extract in large bowl with hand or stand mixer.
  4. Add eggs and beat until well mixed.
  5. Add in flour mixture slowly until completely blended.
  6. Here I add dough to 1 pt sized Pyrex baking dishes, which work perfectly for the pizookie. You can also use small cast iron or other glass baking dishes.
  7. Since my husband likes white chocolate and I like milk chocolate, I then add chocolate chips to the top of the dough. You could always incorporate them into the dough first if that is what you prefer.
  8. Bake the pizookies at 375 until golden brown around the edges, approximately 18 minutes.
  9. Remove from the oven; the center will be somewhat mushy still, but perfect for a pizookie!
  10. Serve with a scoop of ice cream on top and you’re good to go!
