{The Food Files} A Sugar-Free Shamrock Shake

Have you seen them? The ads for McDonalds Shamrock Shakes. I die. No literally, it’s one of my favorite items they make. My dilemma? Well, not only should I not eat a shake a day, I actually also shy away from processed sugar and eat fairly low carb. My solution? I try my best to find ways to make things that I love in a low-carb or sugar free option. And here’s what I came up with and thought that I’d share with you, you know, in case you have a hankering for a shamrock shake these days too!

Ingredients
1 cup low-fat cottage cheese
1 cup low-fat milk (or water if you prefer)
3 cups ice cubes (or to desired thickness)
5-6 packets of Stevia (or your preferred sweetner to taste)
1/4 tsp peppermint extract (or to taste, it’s strong)
1/4 tsp green food coloring
Whipped cream (opt)

Directions
Makes 2 servings.
Combine all ingredients and blend until smooth.
Top with real whipped cream (which is low in sugar, optional).

Variations
Protein Packed – add a scoop of protein powder for some added nutrients (may no longer be sugar-free based on the type you add)
Vanilla Dream – add a tablespoon of sugar-free vanilla instant pudding mix
Mint Chocolate Chip – add a tablespoon of diet hot chocolate mix (my favorite!)

Hi friends! Today I’m sharing an easy nachos recipe for those evenings when you need a quick, go-to meal! It’s also a family favorite, I hope you enjoy it too!

A quick and easy nachos recipe!
Ingredients
  • Ground beef
  • Shredded cheese
  • Tortilla chips
  • Ro-tel (diced tomatoes and green chilies)
  • Pinto beans
  • Jalapenos (opt)
  • Sour cream (opt)
  • Salsa (opt)
  • Guacamole (opt)
Instructions
  1. Brown the ground beef and your choice of seasoning (I use salt and pepper). Drain the can of pinto beans and add to the beef along with the can of Ro-tel.
  2. Stir the mixture and let it cook until the juice from the tomatoes evaporates and all is warmed thoroughly.
  3. Spread tortilla chips out on a baking sheet, cover with shredded cheese, and place under broiler on high and watch for the cheese to melt.
  4. If you like your nachos spicy, at this point you can add a jalapeno slice to each chip.
  5. Cover with meat and bean mixture.
  6. Serve with sour cream, salsa, and guacamole (optional).

See, easy! And it’s a crowd pleaser. If you’re feeding the little ones, try serving them up a bowl of the meat and beans (my kids love that). Or if you’re trying to eat low carb, the meat and beans also make a tasty salad topper! I hope you enjoy!

{The Food Files} Out of Brown Sugar?

Have you ever had a hankering for a baked good, and you have all but ONE of the key ingredients? Well that’s the situation we found ourselves in on Saturday night. The hankering? Chocolate Chip Cookies. The missing piece? Brown sugar. Queue: the nearest iPhone. Gotta love technology. Just a few minutes on the interwebs and we found what we thought could be the winning recipe…and here it is:

Ingredients
2 1/2 cups all-purpose flour
2 eggs
1 teaspoon vanilla extract
3/4 teaspoon salt
1 teaspoon baking soda
6 ounces semi sweet chocolate chips
1 cup white sugar
2 tablespoons honey
1 1/4 cup butter

Directions
Makes 36 cookies
Pre-heat oven to 375 degrees F
Cream the butter with the sugar and the honey. Stir in the eggs and vanilla. Add the flour and baking soda. Stir in chocolate chips.
Place teaspoon sized dough about 2 inches apart on an ungreased baking sheet.
Bake at 375 degrees F for 10 minutes or until golden brown.

The final result was a great-tasting-not-too-sweet chocolate chip cookie (being shown off by my lovely friend Morgan here). So next time you don’t have all the ingredients, don’t give up! Do a little research, you might be surprised by what you stumble upon!
